Remodeling of Taitung Eateries
When “Breakfast King” meets the National Kaohsiung University of Hospitality and Tourism(NKUHT), when “Big Two Roast Chicken” encounters Shih Chien University(SCU)’s Architecture Department, and when service training is added to space renovation, Taitung eateries are transformed into clean, comfortable, and pleasant venues.
Professor Yu-Chih Hsiao, from the Department of Architecture at SCU, has been a long term advocate of interweaving creative design and education to serve the non-profit sector. In the fall of 2010, he led a workshop sponsored by the Common Wealth Education Foundation and Alliance to renovate Ruiyuan district’s elementary school to better serve the community. In the winter of 2011, Professor Patrick Su of NKUHT and Professor Hsiao led students from their respective universities in the “Workshop to renovate Taitung Eateries."
The two eateries involved in the workshop are "Big Two Roast Chicken" and "Breakfast King.” “Breakfast King” is a popular traditional breakfast shop in Taitung. This simple and small restaurant attracts a steady flow of customers during breakfast time. The two student teams and their teachers surveyed the site and analyzed the customer flow to come up with a plan to redesign the space to ease congestion. In order not to affect the daily business, team members met during the day and worked on the construction at night. The renovation was completed in 4 nights. Through this effort, a more customer friendly venue for “Breakfast King” was created.
"Big Two Roast Chicken" has been in business for more than 30 years, their delicious food ensures a thriving business. The "Big Two Roast Chicken" renovation involved updating the bathroom, reducing space crowding, improving safety, and creating a new storage space to improve appearance.
Alliance and the student teams from NKUHT and SCU hope the renovation work undertaken can serve as models for other traditional eateries in Taitung, thereby helping Taitung eateries to enhance their appearance and user friendliness.
